Vines

Communes: Vergisson et Solutré
Surface of the plots
: 3 to 4 hectares according to the vintages
Type of vine: Chardonnay
Average age of the vines: variable, many 50 years old vines and older
Soil : limestone clay of various kinds
Exposure and slope : variables according to the parcels

Vinification

Grape harvesting: manual or mechanical according to the parcels
Pressing: pneumatic
Racking: from 24 to 36 hours, static, cold
Alcoholic fermentation: mostly in oak casks, the rest in pieces of 228 liters (no new wood) and a little stainless steel tank. Local yeast
Malolactic fermentation: full and spontaneous
Aging: in the winemaking container, on lees, for 10 to 14 months
Bottling: between July and November spring of the year following the grape picking

Tasting

Its color is straw yellow, limpid and shiny. The nose is an expression of ripe white fruit (apple, peach), floral notes (hawthorn, linden) with a hint of sweet spices. On the palate, the attack is round, enhanced by a nice freshness in the finish.
Storage time: may be drunk between 1 and 5 years of aging
Drink with: white fish in sauce, frogs’ legs, snails, blanquette of veal, white meat…
